We had the most delicious Leek Quiche in Versailles France! When I came home I had to try and recreate it. Simple ingredients, delicious results!!
Leek Quiche
- 5 large eggs
- 1/2 cup half-and-half
- 1 cup cream
- 2 large leeks (white and light green parts only), thinly sliced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 6 ounces shredded Swiss cheese
- 2 ounces shredded parmesan cheese
- 1 unbaked 9-inch pie shell
Heat the olive oil in a small skillet. Add the leeks and cook until fragrant, 2-3 minutes.
In a large bowl, whisk together the eggs, half-and-half, cream, and spices. Stir in the cooked leeks.
Stir in the cheese.
Pour the egg mixture into the pie shell.
Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Remove from oven and cool for 15 minutes before serving.
