Chicken Tostada Salad

Step 1- make Corn Pico de gallo:
2 Roma tomatoes, chopped
1/2 onion chopped
1/2 cup frozen corn, thawed
1/2-1 jalapeΓ±o, chopped
1/2 bunch cilantro, chopped
Splash lime juice
Salt and pepper to taste

In a bowl combine all ingredients. Cover and place in refrigerator for at least 1 hour.

Step 2. Make tortillas wedges
Pour 1 cup water and 2 tbsp oil in shallow dish. Stir. One at a time dip tortilla into water mixture. Cut into wedges. Arrange on baking pan. Sprinkle with salt. Bake in a 425 oven until lightly brown, turning once. (Note-you can leave tortillas whole but we like them in wedges for easy eating!)

Heat 1 can of refried beans in a bowl.

When ready to eat arrange in the following order:
Tortilla wedges
Refried beans
Cabbage
Shredded Rotisserie Chicken
Cheese
Corn Pico de gallo
Guacamole
Sour cream
