This is my favorite summer popcorn! It is sweet, salty, and crunchy! It is the perfect snack to take to the lake, camping, or on whatever adventure you’re heading on this summer!
Cracker Jack Popcorn
- 1 1/2 cups white sugar
- 1 cup brown sugar
- 3/4 cup water
- 2/3 cup corn syrup
- 1/4 tsp salt
- 1 1/2 cups salted peanuts
- 4 tbsp butter
- 1 tsp soda
- 1 tsp vanilla
Pop two bags of microwave popcorn. Place popped popcorn into a large bowl coated with cooking spray. Remove unpopped kernels.
Measure all ingredients before beginning.
Bring sugars, corn syrup, and water to boil in a large saucepan. Cook until the mixture reaches 240 degrees. Add peanuts and cook, stirring constantly until the mixture reaches 290 degrees. Stir in salt. Cook until mixture reaches 300. Add butter and stir until melted. Remove pan from heat and add vanilla and baking soda. Stir quickly – it will get bubbly!
Pour over popcorn in a bowl and quickly stir until the popcorn kernels are well coated. Pour onto a large silpat mat or another nonstick surface, spreading out the popcorn with the spoon.
Cool then break into bite-sized pieces.
Store in an airtight container.
