This salmon is one of my kid’s favorites! I found this recipe in a magazine and started making it when we lived in Maple Valley, which is just outside of Seattle. The marinade is a little sweet and brings out the flavor of the salmon.
Favorite Seattle Salmon
- 1/8 cup brown sugar
- 1 tbsp white wine
- 1 tbsp soy sauce
- 1 tbsp butter
- 1/2 tbsp lemon juice
- 2 salmon fillets
In a microwave safe 4×8 baking dish combine all ingredients, except for the salmon fillets.
Heat on high until boiling, about 2 minutes. Stirring several times to ensure the sugar is dissolved.
Let cool for 10-15 minutes.
Place salmon in marinade and cover and chill for at least 1 hour. Rotating the salmon every 15 minutes if possible.
Lift salmon from the marinade and lay it on a foil “pan”. I use 3 sheets of foil and bend up the edges to make a little pan. You can also use heavy foil.
Transfer to grill and grill until salmon is opaque but still moist-looking in the center of the thickest part. Remove from grill and plate.
Meanwhile, return the marinade to the microwave and heat on full power until boiling. Boil for 2 minutes. Drizzle onto salmon before serving.
