Hawaiian Sloppy Joes
- 3/4 pound ground hamburger (or turkey)
- 1 medium onion, diced
- 1 green pepper, diced (or 1/4 cup dehydrated pepper)
- 1 tbsp minced garlic
- 1 tsp fresh minced ginger
- 3/4 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp cider vinegar
- 1/2 tsp hickory flavored liquid smoke
- 1 tbsp soy sauce
- 1/2 cup pineapple juice
- 1/4 cup bacon crumbles
- salt and pepper to taste
In a large skillet on medium-high heat cook meat, onions, and peppers until about halfway cooked. Add garlic and ginger and continue cooking until meat is completely cooked.
Add ketchup, brown sugar, vinegar, liquid smoke, soy sauce, and pineapple juice to the meat mixture. Cook until thick and bubbly. Add bacon crumbles and season with salt and pepper to taste. Cook for another 2-3 minutes.
To serve:
- 4 Brioche buns
- 4 canned pineapple rings (saute for a few minutes in a non-stick skillet to brown the edges)
- swiss cheese (we like to melt the cheese on the bun in the oven for a few minutes)
- purple onion slices
- peperoncini slices
