Crazy busy nights call for a crazy easy dinner!!

Easy Chicken & Black Bean Pizza
  • 1 can refrigerated biscuits
  • 2 cups diced cooked chicken
  • 1 can black beans, drained
  • 1/2 cup salsa
  • 1/4 cup fresh cilantro
  • 1/4 tsp cumin
  • 2 green onions, chopped
  • 1/2 cup bell pepper, chopped
  • 8 oz shredded cheddar cheese
  • sour cream, if desired
  • guacamole, if desired

Heat over to 350 degrees. On an ungreased cookie sheet or Silpat mat, separate the biscuits and press each biscuit out into a 5-6 inch round.

In a medium bowl, combine the chicken, beans, salsa, cilantro, and cumin and mix well. Spread evenly over the biscuits to within 1/4 inch of the edge. Top with onions, bell peppers, and cheese as desired.

Bake for 20-25 minutes or until the biscuits are golden brown and the cheese is melted.

To serve, top with sour cream and guacamole.
