This just tastes like sunshine! It is great in the summer, fall or is especially great when you have the winter blues!
Cilantro-Lime Chicken with Avocado Salsa and Saffron Rice
Chicken:
- 2 tbsp fresh cilantro, chopped
- 2 1/2 tbsp lime juice
- 1 tbsp olive oil
- 1/4 tsp salt
- 2 boneless skinless chicken breasts
Combine all ingredients in a ziplock bag or bowl and allow the chicken to marinate for at least 30 minutes.
Grill chicken on the BBQ for 5-6 minutes per side until done.
Serve with avocado salsa and saffron rice.
Avocado Salsa:
- 1 cup chopped Roma tomatoes
- 3 tbsp chopped red onion
- 1 avocado, peeled and chopped
- 2 tsp lime juice
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/2 cup cilantro
In a bowl mix all salsa ingredients, cover and chill until ready to serve.
Saffron Rice:
- 1 cup rice
- 2 cups chicken broth
- 1 tbsp butter
- 1 tbsp dried onion flakes
- 1/2 tsp minced garlic
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 pinch saffron, crumbled
In a medium-size saucepan combine all the ingredients.
Bring to boil, cover, reduce heat to low, cover, and continue cooking for 15-20 minutes or until the chicken broth is absorbed and the rice is tender.
