We love this easy chicken parmesan recipe. The secret to the flavor is the onions in the breading!
Easy Chicken Parmesan
- 3 chicken breasts
- 1/2 cup french fried onions
- 1/3 cup grated parmesan cheese
- 1/3 cup bread crumbs
- 1/3 cup flour
- 1/2 tsp basil
- 1 tbsp oil
- 1/2 cup grated parmesan cheese
Place chicken in between two pieces of plastic wrap. With a meat mallet pound the chicken until it is 1/4-1/2 in thick. Cut into smaller portion sizes if necessary. Set aside.
Place french-fried onions, 1/3 cup parmesan cheese, bread crumbs, flour, and basil into a food processor and pulse until well blended.
Place a piece of plastic wrap over a plate and dump the breadcrumb mixture on the top.
Put each piece of chicken on top of the breadcrumb mixture and press slightly to get the mixture to stick to the chicken, turn over and repeat on the other side. Set aside.
Heat oil in a nonstick skillet. Add chicken and cook for 3-4 minutes per side, until cooked through. Remove from the skillet and place chicken onto a cookie sheet.
Sprinkle each piece of chicken with grated parmesan cheese and broil for 1-2 minutes, or until the cheese is melted and slightly brown.
Serve with your favorite marinara (this is mine) and spaghetti or angel hair pasta.
