A classic Italian-American dish. This easy chicken piccata recipe has a delicious lemon butter sauce that you will love.
Easy Chicken Piccata
- 4 chicken breasts
- 3 tbsp flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp olive oil
- 4 tbsp butter
- 1/2 cup white wine, or chicken stock
- 1/2 cup chicken stock
- 2 tbsp lemon juice
- 3 tbsp chopped fresh parsley or 1 tbsp dried parsley
- 1 tsp cornstarch
- 1 tsp water
- thin slices of lemon for garnish
With a flat mallet, pound chicken between two pieces of plastic wrap until 1/2 inch thick.
Line a tray with plastic wrap and mix the flour, salt, and pepper on top. Dredge the chicken in the seasoned flour on both sides and set aside.
Heat the oil in a large skillet over high heat. When hot, add chicken and cook for about 2 minutes, until nicely browned. Turn over and cook the other side, adding more oil if necessary. Remove chicken and set aside.
Add butter to the same skillet, when it is melted add wine, chicken stock, lemon juice, and parsley. Stir well.
Add chicken. Cook turning the chicken so that it cooks evenly, for about 5 minutes.
Remove chicken from pan.
In a small bowl mix cornstarch and water together. Slowly pour into the sauce in the skillet, stirring constantly, until the sauce is a nice consistency. Serve over chicken, and garnish with lemon slices.
