This Thai inspired easy slow-cooker dinner is delicious!
- 1 1/2 lbs chicken, cut into 3/4 inch pieces
- 1 red bell pepper, cut into thin strips
- 1 1/4 cup chicken broth, divided
- 1/4 cup soy sauce
- 1 tbsp minced garlic
- 3/4 tsp red pepper flakes
- 1/4 tsp salt
- 2 tbsp cornstarch
- 3 green onions, cut into 1/2-inch pieces
- 1/3 cup cream peanut butter
- cooked vermicelli or thin spaghetti noodles
- peanuts, chopped
- cilantro, chopped
Place chicken, bell pepper, 1 cup broth, soy sauce, garlic, red pepper flakes, and salt in a slow cooker and cook on low for 3 hours.
Mix cornstarch with the remaining 1/4 cup broth in a small bowl. Turn the slow cooker on High. Slowly stir in the cornstarch mixture, green onions, and peanut butter. Stir until well combined. Cook for an additional 30 minutes or until sauce thickens.
Serve over cooked vermicelli or thin spaghetti noodles and garnish with peanuts and cilantro if desired.
