Now you can make delicious Samoa cookies at home anytime!!
Homemade Samoas
- 36 homemade or store-bought butter or shortbread cookies
- 1 1/2 cups toasted coconut
- 1 cups caramel (I like this recipe), divided
- 1 1/2 cups good chocolate
In a small bowl combine coconut and 3/4 cup caramel, stir well.
Working with one cookie at a time, spread a small amount of the remaining caramel on top. Immediately place a scoop of the coconut mixture on top and pat down. Repeat with remaining cookies.
In a microwave-safe bowl, melt the chocolate. Working with one cookie at a time, place 1 teaspoon of chocolate on parchment, put a cookie on top, and press down until you can see the chocolate on the edges. Repeat with remaining cookies.
Place the remaining chocolate into a ziplock bag and cut off one of the corners. Drizzle the chocolate on top in the desired pattern.
Cool and enjoy!! Store in an airtight container.
Note: we like these cookies better the next day, the cookie base gets softer and the flavors blend!
