This Creamy Sun Dried Tomato Gnocchi is to die for and it can be on the table in less than 30 minutes!!
Creamy Sun Dried Tomato Gnocchi
- 1 tbsp olive oil from sun-dried tomatoes
- 1/4 cup red onion, chopped
- 1 tbsp garlic, minced
- 1 pint cherry tomatoes
- 1/2 cup Sun Dried tomatoes chopped
- 1/3 cup white wine, or chicken broth
- 1 cup heavy cream
- 2 cups spinach chopped
- 1/3 cup parmesan cheese, grated
- 8 ounces dried gnocchi
In a saucepan, boil gnocchi as directed on the package. Set aside.
In a large skillet over medium heat, add the oil from the tomatoes. Once hot, add the onions and saute for 2-3 minutes.
Add the garlic and tomatoes and cook until the tomatoes burst. Stir in sun-dried tomatoes and continue cooking 4-5 minutes.
Add cooking wine and cook for 2-3 minutes.
Add the cream and cook until sauce is thickened.
Stir in the gnocchi and cook for 2 minutes.
Stir in the spinach and cheese and cook until the cheese in melted.
Serve immediately with additional parmesan cheese if desired.
