Baked Banana French Toast

This yummy baked French toast recipe is quick, easy, and delicious!

Baked Banana French Toast

Egg Mixture

  • 5 eggs
  • 2/3 cup milk
  • 1/3 cup orange juice
  • 1 tbsp cinnamon
  • 1 tbsp vanilla

Loaf of bread sliced thick (Brioche, French bread, or challah all work well)

bananas, sliced

Filling

  • 1 1/2 cup pecans or walnuts
  • 1/4 cup brown sugar
  • 1/4 cup butter

Preheat oven to 350 degrees.

Coat a 9×13 pan with cooking spray.

In a bowl combine the egg mixture ingredients.

In a food processor, blend the filling ingredients well and set aside.

Dip bread in the egg mixture and place in a single layer in the bottom of the prepared pan.

Top bread with nut mixture, then sliced bananas.

Dip the remaining bread in the egg mixture and place on top of the bread in the pan. Pour any remaining egg mixture over the top.

Cover with foil and bake for 30 minutes.

Remove foil and bake for an additional 8 minutes.

Serve bottom side up with warm maple syrup.
