Carrot Pudding

This traditional English Christmas desserts is one of my Dad’s favorites. It just isn’t Christmas without it!

Carrot Pudding

  • 1/2 cup butter
  • 1 cup grated carrots
  • 1 cup sugar
  • 2 eggs
  • 1 tsp soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp cloves
  • 1 tsp nutmeg
  • 1/2 cup dry breadcrumbs
  • 1 cup chopped nuts (we like either pecans or walnuts)
  • 3/4 cup raisins
  • 1 cup chopped dates
  • 1 cup flour

Cream butter, sugar, and eggs together. Add remaining ingredients and stir until well combined.

Spray the inside of four pint jars with cooking spray. Divide the mixture between the jars and put the lids on.

Turn the crockpot on high and fill the bottom of the crockpot up with at least 3 inches of boiling water.

Cook for 2 hours.

Remove from crockpot and serve warm with whipped cream and salted caramel sauce (I use this recipe).

Or store in the refrigerator until ready to serve.

Reheat in the microwave before serving.
