This one dish is meal is delicious! The chicken is tender and the rice is creamy and can be prepped in less than 10 minutes!
Chicken and Rice Bake
- 3-4 chicken breasts
- 1 cup rice
- 2 1/2 cups chicken broth
- 1 1/2 packages dry onion soup mix, divided
- 2/3 cup sour cream
- 1 can cream of chicken soup
- 1/4 cup butter
Spray a 9×13 pan with cooking spray. Sprinkle rice on the bottom of the pan.
Place chicken on top of the rice. Sprinkle chicken with salt, pepper, garlic, and half a package of the onion soup mix.
Pour chicken broth over the top of the rice. Cover tightly with foil.
Bake at 200 degrees for 2 1/2 – 3 hours. (In a hurry? Alternatively, you can bake at 350 degrees for 1 hour.)
In a small bowl melt butter. Then add soup, sour cream, and the remaining package of the onion soup mix. Stir well.
Remove the pan from the oven and spread the sour cream mixture on top. Bake for an additional 15 minutes.
Remove the pan from the oven. Remove the chicken and place on a serving plate. Mix the rice and sour cream mixture until well blended, and serve with chicken.
