This spicy grilled chicken is served in a delicious spiced tomato cream sauce. It is so good!!
Chicken Tikka Masala
Marinade:
1 cup yogurt
1 tbsp lemon juice
2 tsp ground cumin
1 tsp ground cinnamon
2 tsp cayenne pepper
2 tsp ground pepper
1 tsp salt
3 boneless chicken breasts, cut into bite-sized pieces
3 long skewers
In a large bowl combine all ingredient except chicken. Stir well. Stir in chicken and refrigerate for at least 1 hour.
When done marinating, thread the chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes per side. Remove from skewers and set aside.
Sauce:
1 tbsp butter
1 clove garlic
1 small yellow onion, chopped
1 jalapeño pepper, finely chopped
2 tsp cumin
2 tsp smoked paprika
1/2 tsp salt
1 8 ounce can tomato sauce
1 1/2 cup heavy cream
Cilantro
Melt butter in a large skillet. Sauté garlic, onion and jalapeños for 1 minute. Add seasonings, stir well. Add tomato sauce and cook for 1 minute. Add cream. Summer on low until sauce thickens, about 20 minutes. Add grilled chicken and simmer for 10 minutes. Sprinkle cilantro on top.
Serve over rice with naan on the side.
