Creamy Italian Sausage Pasta

This easy pasta dish is full of flavor and veggies!!! It can be served over any type of noodles or even rice!

Creamy Italian Sausage Pasta

  • 3 links @tarantino_gourmet_sausages ( I get them from @costco )
  • 1/2 pound penne pasta
  • 1 tbsp olive oil
  • 1 small yellow onion, minced
  • 1/2 red pepper, chopped
  • 1/2 yellow pepper, chopped
  • 2 cloves garlic, minced
  • 1/2-1 tsp red pepper flakes
  • 2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1 1/2 cups heavy cream
  • 2 cups baby spinach, rough chopped
  • 1/2 cup shredded Parmesan cheese

Cook penne pasta in a pot of well salted water according to the package directions.

While pasta is cooking heat oil in a large skillet. Add sausage (skins removed), garlic, onion, Italian seasoning, red pepper flakes and salt. While cooking break sausage up. When sausage is almost done add peppers and continue cooking until sausage is no longer pink.

Add cream and simmer until it is thickened-about 15 minutes.

Stir in spinach. Continue cooking, stirring constantly until spinach is wilted. Stir in Parmesan cheese.

Serve over noodles and sprinkle with additional Parmesan cheese, if desired.
