Easy Broccoli Cheese Soup

  • 1/4 cup butter
  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 1/4 cup flour
  • 4 ounces cream cheese
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups whole milk
  • 1/4 tsp Worcestershire sauce
  • 1/2 tsp ground mustard
  • 1/3 tsp dried thyme
  • 3 tsp salt
  • 1 tsp pepper
  • 4 cups broccoli florets
  • 2 cups shredded cheddar cheese
  • croutons & additional cheese (garnish)

In a large saucepan over medium heat, melt butter. Add the onions, garlic, and celery and saute for about 5 minutes.

Add the remaining ingredients, except for the cheese, and simmer for 30 minutes or until the broccoli is soft.

Using an immersion blender, blend the soup until the desired consistency is reached.

Add cheese and stir until melted.

Serve with additional cheese and croutons.
