This recipe is a cross between taco salad and Hawaiian haystacks. My family loves it because everyone can make their plate with only the things they love!
Easy Mexican Beef pileups
- 3 lbs. ground beef or turkey
- 1 cup water
- 1 16 oz can of refried bean
- 1 pkg dry enchilada mix
- 1 large can of red enchilada sauce
- 2 6 oz cans tomato paste
In a large skillet cook ground beef or turkey, and drain fat. Add all the ingredients to a slow cooker and cook on low 4-6 hours.
To serve pile up your plate with the following:
- Cooked rice (white or brown)
- Meat mixture
- grated cheddar cheese
- chopped green onions
- tomatoes
- avocados
- lettuce
- corn chips
- sour cream
- salsa
- taco sauce (we love Trader Joe’s!)
Note: This recipe makes a lot!! But, it freezes well so it can be reheated for a quick meal on a busy night!
