Easy Salmon a la Blanc

  • 4 salmon fillets
  • salt
  • pepper
  • 1 cup diced tomatoes
  • 1/4 cup white wine or chicken broth
  • 3/4 tsp dried basil
  • 1/4 cup shredded Swiss cheese

Preheat oven to 350 degrees.

Cover a baking pan with aluminum foil.

Place salmon fillets in the baking pan and sprinkle with salt and pepper.

Cover with diced tomatoes.

Pour wine or chicken stock over the top and sprinkle with basil.

Bake for 15 minutes.

Remove the pan from the oven and sprinkle with the cheese. Return the pan to the oven and bake for an additional 3-5 minutes or until the cheese is melted and the salmon is cooked to taste.

Serve with steamed broccoli.
