Easy Wonton Soup

2024 is the year of the DRAGON, which officially starts February 10th. According to the Chinese zodiac – the dragon’s energy is infused with flexibility, adaptability, and growth. So, 2024 is a year of great potential and opportunities for growth. Make this soup to celebrate or just because it is yummy! Either way, it will be a dinner win-win!!

Easy Wonton Soup

Soup:

  • 8 cups chicken broth
  • 3 baby bok choy, chopped
  • 3 green onions, chopped
  • 1 pound mushrooms, sliced
  • Wontons, recipe below

Bring chicken broth, onions, and mushrooms to simmer over low heat. Simmer for 5-6 minutes. Add bok choy and simmer for an additional 4 minutes.

When ready to serve place 4-5 cooked wontons into soup bowls, pour broth over the top and serve.

Wontons:

  • 1/2 lb. ground pork
  • 1 egg
  • 1/2 small can water chestnuts, minced
  • 1 tsp ginger
  • 2 green onions, chopped
  • 1 tsp salt
  • 1 tbsp soy sauce
  • 1 package of premade wonton wrappers

In a bowl mix all ingredients except wonton wrappers until well well blended.

Place 1 tsp meat mixture in the bottom half of the wrapper. Moisten the edges. Fold the wrapper in half so it forms a triangle. Take the two top corners and bring them together and press firmly. Set aside – covered in a damp paper towel to prevent drying out while you make the remaining wontons.

Bring 2 quarts of water to boil in a saucepan. When boiling, carefully place 6-7 wontons into water and boil 4-5 minutes. Remove from the water with a slotted spoon and repeat with remaining wontons.
