Favorite Beef Enchiladas

These are my family’s favorite beef enchiladas. The cheese sauce is to die for!

Favorite Beef Enchiladas

  • 2 lbs ground beef
  • 1 medium onion, chopped
  • 2 15 oz cans refried beans
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 12-15 corn tortillas
  • Sauce (recipe below)

In a large skillet cook beef and onions until the ground beef is cooked thoroughly.

Add the refried beans, salt and pepper and stir until well combined.

Heat corn tortillas in the microwave (wrap in a damp paper towel). Place 1/3 cup meat mixture into the center of a tortilla and roll up. Place tortilla into a greased 9×13 inch pan. Repeat with remaining tortillas.

Pour cheese sauce over the top.

Alternatively: roughly tear 3-4 tortillas into 1-inch pieces and place in the bottom of a 9×13 inch pan. Top with meat mixture, repeat layers ending with a layer of tortillas, and top with cheese sauce.

Bake for 30 minutes at 350 degrees.

Top with additional grated cheese and broil for 3-5 minutes. Serve with lettuce, tomatoes, green onions, and sour cream.

Cheese Sauce:

  • 1/4 cup butter
  • 1/4 cup flour
  • 1 tsp salt
  • 1/2 tsp smoked paprika
  • 2 cups milk
  • 14 ounce enchilada sauce
  • 1/2 cup cheddar cheese
  • Tabasco to taste

Cook butter, flour, salt and paprika in a saucepan until flour browns slightly. Add milk and enchilada sauce, stirring constantly until it comes to a boil. Boil 1 minute. Remove from heat and add cheese and Tabasco.
