I know, everyone has their favorite pumpkin bread – this is mine!!! Bakery style with a delicious streusel topping, plain or grab-and-go muffins. Any way you bake it, it is delicious!!
Favorite Pumpkin Bread
- 1 29 oz can pumpkin puree
- 4 1/2 cups flour
- 1 1/2 tsp soda
- 1 1/2 tsp salt
- 4 1/2 tsp cinnamon
- 1 1/2 tsp nutmeg
- 1 tsp cloves
- 3 1/2 cups white sugar
- 2 cups oil (canola or vegetable)
- 5 eggs
- 2 cups chopped nuts or chocolate chips, optional
Preheat oven to 350 degrees. Prepare 3 (8×5) loaf pans by greasing and flouring the bottom and sides.
Cream sugar oil and eggs together in a large bowl. Add the pumpkin puree.
In a separate bowl combine the dry ingredients and then stir the dry ingredients into the pumpkin mixture until well blended.
Stir in nuts or chocolate chips if using.
Bake for 40-45 minutes.
Leave in the loaf pans for 10 minutes before removing. Let sit on a wire rack to cool.
Notes:
- You can also bake this into muffins. I bake mine for 20-25 minutes.
- If you like a streusel topping. In a small bowl combine the following: 1 1/2 cup flour, 3/4 cup oats, 3/4 cup brown sugar 1 tsp cinnamon, and 3/4 cup melted butter. Sprinkle on top before baking. This will cover all three loaves. After loaves are cooled make a simple glaze by mixing 3/4 cup powdered sugar, 1-2 tbsp water, and 1/4 tsp vanilla. Add additional water as necessary to get to the desired consistency. Pour into a small ziplock bag, cut one corner then drizzle the glaze on the top of the cooled bread.
