Ham, Bacon & Potato Breakfast Bake

After testing lots of recipes over the years, I finally came up with my own recipe that checks all the boxes – ham, bacon, potatoes, and cheese! We love this served with homemade salsa.
  • 4 cups frozen shredded potatoes
  • 3/4 cup onion, diced very small
  • 1 cup bacon crumbles
  • 1 pound ham, cut into small cubes
  • 2 cups cheese (I use a Mexican cheese blend)
  • 5 eggs
  • 3/4 cup milk
  • 1 tsp Lawry’s seasoned salt
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper

Spray a 9×13 pan with cooking spray.

Spread 2 cups shredded potatoes on the bottom, top with half of the onion, 1/2 cup bacon, half of the ham, and 1 cup cheese.

Repeat layers: potatoes, onion, bacon, ham and then cheese.

In a bowl combine the eggs, milk, and seasonings. Pour over the top of the ingredients in the pan.

Cover with foil and place in the refrigerator overnight.

In the morning, preheat oven to 350 degrees.

Bake for 30 minutes, then remove the foil and bake for another 30 minutes.

Turn oven to broil and broil for a few minutes to brown up the top.

Let sit for 5-10 minutes before serving.
