A hearty soup packed with lentils, sausage, and lots of vegetables!
Lentil Sausage Soup
- 2 cups lentils, rinsed and drained
- 1 pound italian sausage
- 1 cup onion, chopped
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 tbsp minced garlic
- 1 tbsp parsley
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 8 cups water
- 2 cans diced tomatoes
- 2 tbsp red wine vinegar
Place all ingredients into a slow cooker except for tomatoes and vinegar.
Cook for 5 hours on low.
Add tomatoes and vinegar and cook for an additional 2 hours.
