This recipe was shared with me a few years ago and has become a favorite!! It is so delicious!
Maple Glazed Pork Tenderloin
- 1/2 cup pure maple syrup
- 1/4 cup molasses
- 1 tbsp red wine vinegar
- 1/4 tsp smoked paprika
- 1/4 tsp ground ginger
- 1/4 cup cornstarch
- 2 tbsp sugar
- 1 tbsp salt
- 2 tsp pepper
- 1/2 lb pork tenderloin
- 2 tbsp canola oil
Preheat oven to 375 degrees.
Stir 1/4 cup maple syrup, molasses, vinegar, paprika, and ginger together in a small bowl. Set aside
Whisk cornstarch, sugar, salt, and pepper together in a small bowl. Transfer to a small rimmed baking sheet. Pat the tenderloin dry with a paper towel and then roll in the cornstarch mixture until evenly coated on all sides.
In a nonstick skillet heat the oil over medium-high heat. Place the tenderloin in the skillet and cook until well browned on all sides (approximately 5-6 minutes total). Transfer tenderloin to a lightly greased baking sheet.
Add the syrup mixture to the skillet and simmer for 1 minute. Set aside 1 1/2 tablespoons of this mixture aside. Brush tenderloin with approximately 1 tablespoon of the remaining glaze.
Roast the pork for about 15 minutes or until the internal temperature is 130 degrees.
Brush tenderloin with more glaze and roast for another 5 minutes or until the internal temperature is 140 degrees.
Remove the tenderloin from the oven and let it rest for 10 minutes.
While resting, add the 1 1/2 tablespoon glaze to 1/4 cup maple syrup in a small bowl. Pour this mixture over the top of the tenderloin.
Cut and serve.
Note- if you buy your tenderloin at Costco, there are two tenderloins per package. Double the sauce but don’t double the cornstarch mixture – you will have plenty!
