Mexican Shredded Beef

This shredded beef is so easy!! It is full of flavor and can be used in burritos, tacos or my favorite; a salad!

Mexican Shredded Beef

  • 2-3 pounds beef roast
  • 3/4 cups green salsa
  • 1 tbsp mined garlic
  • 5 green onions, chopped
  • 1/4 cup jalapeño peppers (I use canned)
  • 6 tsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp salt

Place all ingredients into slow cooker. Cover and cook on low 8 hours. Shred and serve:

Burrito – wrapped beef in flour tortilla topped with tomatoes, onions, avocado, lettuce and sour cream.

Salad- put the beef on top of a bed of lettuce top with tomatoes, onions, avocado, black beans, a sprinkle of crushed corn chips and sour cream! 😋
