Mom’s Potato Salad

I have used my mom’s recipe for years that literally just had a list of ingredients. I finally added quantities so everyone can create this favorite without worrying if it will pass the test at the next family gathering!! (Yes, I’m looking at you, Dad!!)

Mom’s Potato Salad

  • 2 1/2 lbs. red potatoes
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 1/2 cups mayonnaise
  • 1/3 cup mustard
  • 2 tsp seasoned salt
  • 1 tbsp apple cider vinegar
  • 2-3 hard-boiled eggs, optional

Put potatoes into a large pot. Cover with water and boil, with the skin on, for about 20 minutes.

Remove from heat and put potatoes into cold water to cool quickly.

Removed skins and chop into even cubes and place into a large bowl.

Add onions and celery.

In a separate bowl stir together the mayo, mustard, seasoned salt and apple cider vinegar.

Pour dressing over potato mixture on stir gently until well combined.

Place in refrigerator for at least 8 hours, overnight is best.

When ready to serve, chopped up hard-boiled eggs, if using, and gently stir.
