Mom’s Zucchini Bread

This is my mom’s recipe and I love it! I’ve made a few changes to her original – I add sour cream and whole wheat pastry flour. You can leave out the sour cream and use all all-purpose flour if you like, but I love the flavor and texture of the bread when I add these ingredients.

Zucchini Bread

  • 2 cups white sugar
  • 3 eggs, room temperature
  • 1 cup oil
  • 1/2 cup sour cream
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/4 tsp salt
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • 3 cups flour (I use 1 1/2 cups whole wheat pastry flour & 1 1/2 cups all-purpose flour)
  • 2 cups grated zucchini
  • 1 cup mini chocolate chips

In a mixer bowl add the sugar and eggs and beat for about 2 minutes. Add the oil, vanilla, and sour cream. Mix until well blended.

Add the flour, baking powder, baking soda, salt, and cinnamon. Mix until well blended.

Stir in the grated zucchini. In a separate bowl stir 2 tsp flour into the chocolate chips, then add them to the batter and stir to combine.

Pour into greased and floured bread pans. Bake at 350 for 45-50 minutes.
