Potato Corn Chowder

This soup is filled with potatoes, corn, veggies, ham, and bacon! The spices give it just the right amount of heat to warm you up on a cold day.

Potato Corn Chowder

  • 1/2 cup celery, chopped
  • 1/2 cup yellow onion, chopped
  • 1/2 cup red pepper, chopped
  • 1 tbsp butter
  • 2 tbsp flour
  • 1 can of evaporated milk
  • 3-4 red potatoes, diced
  • 1 can of creamed corn
  • 2 cans corn, drained
  • 16 ounces chicken broth
  • 1 cup diced ham
  • 2 tsp cumin
  • 1/2 tsp cayenne pepper
  • salt and pepper to taste
  • Optional garnish – bacon crumbles and green onions

In a saucepan melt butter. Add celery, onions, and red pepper. Cook for 2 minutes. Add flour and cook for an additional minute.

Slowly stir in evaporated milk and stir until well combined.

Put mixture into slow cooker.

Add potatoes, corn, and broth. Cook on high for 4 hours.

Add ham and spices, reduce heat to low, and continue cooking for 2-3 more hours.

Serve with bacon crumbles and green onions if desired.
