Take your grilled burgers to the next level with these amazing pretzel buns!!
Pretzel Buns
1 1/2 cups warm water
2 1/2 tsp dry yeast
2 tsp white sugar
4 1/4 cups bread flour
2 tsp salt
4 tbsp melted butter
1/4 cup baking soda
1 egg, lightly beaten
salt for sprinkling
In the bowl of your stand mixer, add the water, yeast, and sugar. Let sit for 5-10 minutes until foamy.
Add the flour, salt, and melted butter.
Mix until well combined and forms a ball. Cover and let rise until double in size.
Pull dough out of the bowl onto a lightly floured surface and divide into 8 equal portions (use a kitchen scale). Form each portion into a ball.
Place onto a cookie sheet lined with parchment paper seam side down.
Cover with a towel and let rest until double in size.
Preheat oven to 425.
In a large saucepan bring 2 quarts of water to a low boil. Remove from heat and add baking soda. Return the water to a low boil.
Place 3 rolls at a time into the poaching liquid, seam side down. Poach for 30 seconds, carefully roll over, and poach for another 30 seconds. Remove with a slotted spoon and place the roll on the same prepared pan lined with parchment seam side down.
Repeat with the remaining rolls.
Using a pastry brush, brush each roll with the beaten egg, sprinkle with salt, then cut an “X” shape on the top of each roll.
Bake for 15-20 minutes or until nicely brown.
