This recipe is from my mother-in-law. It is a family favorite and is so good!! Think elevated comfort food!
Savory Chicken Crepes
- 2/3 cup butter
- 2/3 cup flour
- 2 cups milk
- 1 tsp salt
- 2/3 cup half and half or cream
- 1 can mushrooms
- 1 can sliced water chestnuts
- 1/2 cup sliced almonds
- 2 cups shredded chicken, cooked
- 1 cup shredded cheddar cheese
- 8-12 crepes (I use this recipe for French crepes and this recipe for gluten-free crepes)
In a saucepan melt the butter. Add the flour and cook for about 2 minutes until bubbly and it begins to brown. Add the milk while stirring contanstly. Cook mixture until thickened.
Then add the salt, cream, mushrooms, and water chestnuts. Remove 2 cups of the sauce and set aside.
Add the chicken and 1/2 cup of the cheese to the remaining sauce.
Place crepes on a flat surface and put about 1/3 cup of the chicken mixture in each one, roll up, and place into a greased 9×13 pan.
Pour the sauce over the top and top with remaining cheese and additional sliced almonds, if desired.
Cover with foil and bake at 325 degrees for 25-30 minutes or until cheese is melted and they are hot.
