The secret to these delicious enchiladas is the homemade cheese sauce!
Shredded Beef Enchiladas
- Mexican shredded beef (Click here for Recipe)
- 12-15 corn tortillas
- Sauce (recipe below)
Heat corn tortillas in microwave (wrap in a damp paper towel). Place 1/3 cup meat mixture into the center of a tortilla and roll up. Place tortilla into a greased 9×13 pan. Repeat with remaining tortillas.
Pour sauce on top.
Bake for 30 minutes at 350 degrees.
Top with grated cheese and broil for 3-5 minutes. Serve with lettuce, tomatoes, green onions and sour cream.
Cheese Sauce:
- 1/4 cup butter
- 1/4 cup flour
- 1 tsp salt
- 1/2 tsp smoked paprika
- 2 cups milk
- 14 ounce enchilada sauce
- 1/2 cup cheese
- Tabasco to taste
Cook butter, flour, salt and paprika in a saucepan until flour browns slightly. Add milk and enchilada sauce, stirring constantly until it comes to a boil. Boil 1 minute. Remove from heat and add cheese and Tabasco.
