Shrimp and Artichoke Alfredo

Shrimp and Artichoke Alfredo

  • 2 1/2 cups heavy cream
  • 3/4 cup grated parmesan cheese
  • 1/4 tsp garlic
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 15 large raw shrimp, peeled and deveined
  • 3/4 cup canned artichoke hearts, drained and chopped

Pour cream into a large skillet. Cook on medium-high heat for 8-10 minutes or until thick. Stirring frequently.

Add garlic, salt, pepper, and artichoke hearts. Stir well and cook for 2 minutes.

Add shrimp. Flip over as they begin to turn pink, about 1 minute. Cook on the other side.

Add cheese and stir until melted.

Serve over cooked fettuccini noodles with additional parmesan cheese.

Notes: if artichokes aren’t your thing, this recipe is also delicious with asparagus!
