So delicious and easy!! The secret is in the sauce!!
Shrimp Po’Boys
- 1 lb large shrimp, peeled and deveined, tails removed
- 1 tbsp olive oil
- 1-2 tbsp creole seasoning (recipe below)
- soft sandwich rolls
- lettuce
- tomatoes
- red onion
- delicious sauce (recipe below)
In a small bowl combine the shrimp, oil, and creole seasoning. Stir to ensure the shrimp is well covered. Grill shrimp or cook in a cast iron skillet until the shrimp turn pink.
To serve, cut rolls horizontally. Put shrimp, lettuce, tomatoes, onions, and a good scoop of the sauce on the bun and enjoy!
Sauce:
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp pickle relish
- 1/2 tbsp prepared horseradish
- 1 tsp tarragon
- 1/2 tsp garlic
- 1/4 tsp hot sauce, or to taste
- 1/4 tsp sweet paprika
- 1/4 tsp salt
- 1/8 tsp pepper
- dash creole seasoning
Creole seasoning:
- 2 1/2 tbsp paprika
- 1 1/2 tbsp salt
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp oregano
- 1 tbsp basil
- 1/2 tbsp thyme
- 1/2 tbsp black pepper
- 1/2 tbsp white pepper
- 1 tablespoon cayenne pepper
Mix all ingredients together and store in an airtight container.
