Spinach Mushroom Manicotti

This is my favorite manicotti recipe. You can make it with or without mushrooms!

Spinach Mushroom Manicotti

  • 1 package of manicotti noodles
  • 1 package frozen spinach, thawed and drained well
  • 12 ounces mushrooms, chopped
  • 2 tsp garlic, minced
  • 1 tbsp olive oil
  • 12 ounces ricotta (I love this recipe)
  • salt and pepper to taste
  • 1 cup mozzarella cheese, shredded
  • 2 cups marinara sauce (I love this recipe)
  • 1/2 cup parmesan cheese

In a large pot boil manicotti noodles for 9 minutes. Drain and set aside.

In a skillet heat oil. Then add mushrooms and garlic and saute for 4-5 minutes or until nicely brown.

In a bowl combine ricotta, mushrooms, spinach, mozzarella, and salt and pepper to taste.

Fill manicotti noodles.

Spread a thin layer of marinara in the bottom of a 9×13 baking dish. Put the filled manicotti noodles on top.

Top with remaining marinara.

Cover with foil and bake for 30 minutes at 350 degrees.

Remove foil. Top with parmesan cheese and bake until the cheese is melted and nicely browned, approximately 5 minutes.
