We eat this year-round, not just when we have an overabundance of zucchini! And, I’ll be honest, when my kids were younger they would only eat the filling. Now that they have grown up, they will actually eat the zucchini! Either way you eat it, it is delicious!!
Stuffed Zucchini
- 1 medium zucchini
- 1/2 pound ground hamburger (or turkey)
- 1/2 cup chopped onion
- 1/3 cup marinara (I use this recipe)
- 1 egg, beaten
- 1/8 cup bread crumbs
- 1/8 tsp salt
- 1/8 tsp pepper
- 1/2 cup shredded cheese
Preheat oven to 350 degrees.
Cut zucchini in half lengthwise and scoop out the inside leaving 1/4-1/2 inch shells.
Place shells in an ungreased microwave-safe dish. Cover and microwave for 3 minutes on high. Drain any liquid and set aside.
In a skillet cook beef and onion over medium heat until the meat is no longer pink, and drain.
Stir in marinara sauce, egg, bread crumbs, salt, pepper, and half of the cheese.
Divide the mixture between the shells and top with the remaining cheese.
Bake uncovered for 30 minutes.
