Quick, easy and perfect for meatless Monday!! (Is that still a thing??)

Veggie, Rice and Black Bean Tortillas

  • 1 Tbsp oil
  • 1 Tbsp garlic
  • 1 cup chopped onion (I like yellow & purple combo)
  • 1 cup chopped carrots
  • 1 cup chopped pepper
  • 1 1/2 tsp cumin
  • 1 tsp ground coriander
  • Dash cayenne

Add oil, garlic and veggies into a pan. Sauté until onions are translucent. Then add:

  • 1 can black beans (drained and rinsed)
  • 2/3 cup orange juice
  • Dash red wine vinegar

Bring to simmer then cover and simmer for 30 minutes.

Serve on warmed flour tortillas with cooked brown rice and a little sour cream or plain yogurt.
